Vegetable Beef Soup Recipe

Brown beef aggressively in 2 or 3 batches adding more oil if needed. In a large saucepan bring to boil the beef and vegetable stocks. Remove browned beef into a bowl. Pat beef dry with paper towels then sprinkle with salt and pepper.
Dab beef dry with paper towels season with salt and pepper then add half of the beef and brown about 4 minutes turning halfway through. Reduce the heat to low and simmer for 3 hours. Add all the vegetables to the pot and allow to saute for 10 15 minutes until they start to soften and caramelize. Saute for 3 4 minutes stirring occasionally.
